    • Preheat your oven to 350°F (180°C/160°C fan).
  2. Mix Ingredients:
    • In a mixing bowl, stir together the almond flour, half of the Parmesan and Swiss cheese, salt, and pepper until combined.
    • Add any extra flavorings if desired. Add the eggs and blend with a hand mixer until smooth.
  3. Shape the Dough:
    • Shape the dough into a ball. Roll it between two sheets of parchment paper until it’s approximately 3 mm thick.
  4. Cut the Crackers:
    • For square or rectangular crackers: Fold the edges to form a rectangle and re-roll to remove the folds. Use a pizza cutter to slice into 3 cm square crackers.
    • For round crackers: Use a 5 cm cookie cutter to cut out circles and place them on a parchment-lined baking sheet. Re-roll any remaining dough and cut out more circles.
  5. Bake:
    • Sprinkle the remaining cheese on top of the crackers.
    • Bake in the oven for 20-30 minutes, until golden on top.
    • Remove from the oven and allow to fully cool to crisp up.
