Ingredients
- 1 cup (225 g) of mixed berries
- 1 Tablespoon (15 ml) of lemon juice
- 3 Tablespoons (45 g) of coconut oil, solid
- 1/2 cup (60 g) of almond flour
- 3/4 cup (60 g) of shredded coconut
- 1/2 teaspoon (3 ml) of vanilla extract

Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the berries and lemon juice, gently squishing the berries. Divide the mixture between 6 shallow ovenproof dishes or one larger dish. Bake for 15 minutes.
- While the berries are baking, cut the solid coconut oil into small pieces. In a separate bowl, mix the almond flour and coconut oil until the mixture resembles breadcrumbs. Stir in the vanilla and shredded coconut.
- Remove the berries from the oven and evenly sprinkle the crumb mixture over the top. Return to the oven and bake for an additional 5-8 minutes, or until the topping is golden and crispy.
