How to Cook Keto Greek Chicken Kabobs
During those hot summer days, grilling is my go-to method, but these kabobs also cook beautifully in a cast iron skillet.
The Greek flavors really shine, just like in my keto sheet pan Greek chicken and my favorite keto roasted artichoke hearts. Trust me, you’ll want to add this dish to your regular chicken recipe rotation!

Instructions
- Marinate the Chicken: In a large bowl, combine the cubed chicken breast, olive oil, Greek seasoning, and lemon zest. Toss until the chicken is evenly coated. Let the chicken marinate for at least 15 minutes, or up to 3 days for maximum flavor.
- Prepare the Grill or Skillet: Heat your grill to high heat. If you’re using a cast iron skillet, preheat it over high heat.
- Assemble the Kabobs: Thread the marinated chicken onto skewers.
- Cook the Kabobs: Once the grill or skillet is hot, cook the chicken skewers for about 8 minutes per side, or until the internal temperature reaches 165ºF.
- Rest and Serve: Allow the kabobs to rest for 5 minutes before serving. Serve warm with your favorite sides.

Storage
Leftover kabobs can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 6 months.
Recipe Notes
- Chicken: I used chicken breasts, but chicken thighs work just as well with no change in cook time.
- Oil: Olive oil adds a wonderful flavor, but avocado oil is a great alternative.
- Greek Seasoning: I’m a big fan of Primal Palate’s Super Gyro Greek seasoning. If you don’t have it on hand, dried oregano works perfectly—just use the same amount.
