Why You’ll Love This Skillet Meal

There’s something magical about one-skillet meals—they’re quick, convenient, and make cleanup a breeze. This creamy garlic chicken is reminiscent of your favorite Italian restaurant dishes but without the high price tag or the pasta, making it a perfect keto-friendly option.

Cooking in a cast-iron skillet gives the chicken a beautiful sear, locking in all those delicious juices. The chicken is seasoned with Italian herbs and served in a rich, garlicky cream sauce loaded with Parmesan and Gouda cheese. You’ll find yourself reaching for seconds, maybe even thirds!

What Is Tuscan-Style Chicken?

Tuscan-style chicken features chicken breasts (or thighs) seasoned with classic Italian herbs. It’s served in a garlicky, cream-based sauce similar to Alfredo, but with a twist—Gouda cheese adds a depth of flavor, and fresh spinach and tomatoes give it a burst of freshness.

How to Make Tuscan Chicken in a Cast Iron Skillet

If you’re new to using a cast iron skillet, you’re in for a treat. It retains heat better than most pans, ensuring your chicken cooks evenly with a perfect golden-brown crust. Here’s a quick overview of the steps:

  1. Season & Sear: Season your chicken with Italian seasoning, paprika, salt, and pepper. Heat olive oil in your cast iron skillet over medium heat. Once hot, add the chicken and sear until browned on both sides, being careful not to overcook. Set aside.
  2. Build the Sauce: In the same skillet, add butter, garlic, onion, and tomatoes. Sauté for about 5 minutes, allowing the flavors to meld. Deglaze the pan with chicken broth, scraping up any flavorful bits from the bottom.
  3. Create the Creamy Sauce: Stir in heavy cream, Parmesan, Gouda, and spinach. Let the sauce simmer until it thickens, stirring occasionally to prevent sticking.
  4. Combine & Serve: Return the chicken to the skillet, simmer for a couple of minutes to meld the flavors, and top with extra Parmesan if desired.

Can You Make This Ahead of Time?

Yes, you can! To avoid drying out the chicken, undercook it slightly when you first sear it. When reheating, cover the skillet with foil and bake at 350°F until the chicken reaches an internal temperature of 165°F.

What to Serve with Keto Tuscan Chicken

This rich dish pairs beautifully with lighter sides. Zucchini noodles are a fantastic low-carb option, as is roasted cauliflower. For a Southern twist, try serving it with green beans—they complement the creaminess of the sauce perfectly.
