  • 2 tablespoons (30 ml) olive oil
  • 3 cloves garlic (9 g), peeled and finely chopped
  • 4 green onions (20 g), sliced (white and green parts separated)
  • 3/4 lb (340 g) cauliflower florets, processed into rice-like pieces
  • 3/4 lb (340 g) corned beef, cut into chunks
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the Garlic: Heat the olive oil in a large nonstick pan and fry the garlic until softened.
  2. Add the Onions and Cauliflower: Add the white parts of the sliced green onions and cook for a few seconds. Then add the riced cauliflower and cook over medium heat until the cauliflower is tender.
  3. Combine with Corned Beef: Add the diced corned beef and gently fold it into the mixture, cooking until the corned beef is warmed through. Adjust the seasoning with salt and freshly ground black pepper.
  4. Garnish and Serve: Garnish with the remaining sliced green onions and serve.
