Ingredients

For the Salad:

  • 1 head iceberg lettuce, sliced
  • 2 cups shredded coleslaw mix
  • 1 bunch cilantro, chopped
  • 1 red bell pepper, ribs and seeds removed, sliced
  • 6 green onions, sliced
  • 1-1/4 cups roasted, sliced almonds
  • 2 cups cooked chicken, chopped
  • 2 packages keto-friendly ramen noodles, raw and crushed (optional, see Notes)

Instructions

  1. Make the Dressing: In a mason jar, combine the avocado oil, rice wine vinegar, soy sauce, monk fruit, and sesame seed oil. Shake well to combine.
  2. Assemble the Salad: In a large salad bowl, mix together the iceberg lettuce, coleslaw mix, cilantro, red bell pepper, green onions, almonds, and chicken. Pour the dressing over the top and toss to combine.
  3. Serve: Enjoy your salad immediately, or store it in the fridge—it stays crunchy even if it’s been tossed in the dressing!

Notes

  • Keto-Friendly Ramen Noodles: I recently discovered these keto-friendly ramen noodles and love adding them to the salad! If you don’t need it to be keto, regular ramen noodles work just as well.
  • Sweetener: Use monk fruit to keep the dressing keto, but if you’re not concerned about carbs, raw honey is a delicious alternative.
  • Chicken: Roasting or grilling chicken breasts is my favorite method, but rotisserie chicken or leftover chicken works just as well.
  • Almonds: If your almonds are raw, roast them at 350ºF for about 10 minutes until golden brown for enhanced flavor.
  • Nut-Free Option: Sunflower seeds make a great substitute if you need to avoid nuts.
  • Coleslaw Mix Substitute: You can use chopped cabbage instead of coleslaw mix; I recommend 1/4 head of red cabbage.
  • Soy Sauce Alternatives: Depending on your dietary needs, tamari, Bragg’s liquid aminos, or coconut aminos can replace the soy sauce.
