The star menu item in any classic Italian restaurant isn’t just the pizza or tiramisu, but the cheesy garlic breadsticks. Before my keto days, I could easily devour an entire serving of cheesy breadsticks and still have room for more. Cheese and carbs were my weakness!

Since starting keto, I haven’t given up my love for pizza, bread, and cheese. Instead, I’ve found ways to recreate these favorites in a keto-friendly way. Inspired by my fathead pizza crust, I adapted it to make this delicious keto cheese bread. It’s perfect as an appetizer and tastes just like traditional cheesy bread, without the carbs. When I served this at a keto Italian-themed dinner, no one could tell it was low carb—they thought it was from a local pizza shop!

What You’ll Need

  • For the dough:
    • 3 cups mozzarella cheese, shredded (low moisture)
    • 2 ounces cream cheese, softened
    • 2 large eggs, room temperature
    • 2 cups almond flour, blanched
    • 1 tablespoon baking powder
  • For the topping:
    • 1 cup mozzarella cheese, shredded
    • 1/2 cup parmesan cheese, freshly grated
    • 1/4 cup parsley, chopped (to serve)

Instructions

  1. Prepare the Dough:
    • Preheat your oven to 400°F (200°C) and line a large baking tray with parchment paper.
    • In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 20-second increments until melted. Whisk until smooth.
    • In a food processor with a dough blade, combine the melted cheese, eggs, almond flour, and baking powder. Blend until a smooth dough forms.
  2. Shape and Top:
    • Transfer the dough onto a parchment paper-lined surface. Place another sheet of parchment paper on top and roll out the dough into a large oval shape.
    • Transfer the dough to the prepared baking tray. Sprinkle the top with mozzarella and parmesan cheese, leaving a 1/2-inch border around the edges.
  3. Bake:
    • Bake for 10-12 minutes, until the cheese is melted and the edges are golden.
    • Remove from the oven and slice using a pizza cutter. Sprinkle with chopped parsley and serve immediately.

  • Sticky Dough: Lightly oil your hands to handle the dough more easily.
  • Dough Hook: Use a dough hook attachment if your food processor has one for a smoother texture.
  • Additional Toppings: Feel free to add toppings like pepperoni, mushrooms, olives, or Italian seasoning.

Storing, Freezing, and Reheating

  • To Store: Keep leftovers in an airtight container in the fridge for up to 5 days. Ensure there are no air pockets to keep the bread soft.
  • To Freeze: Store cooled slices in a ziplock bag and freeze for up to 6 months.
  • To Reheat: Microwave for 20-30 seconds or bake in a preheated oven at 350°F (175°C) for 5 minutes until the cheese is melty.

  • To Reheat: Microwave the bread for 20-30 seconds or reheat in a preheated oven for 5 minutes, until the cheese is melty.
