Inspired by my fathead pizza crust, I adapted it to make this delicious keto cheese bread. It’s perfect as an appetizer and tastes just like traditional cheesy bread, without the carbs. When I served this at a keto Italian-themed dinner, no one could tell it was low carb—they thought it was from a local pizza shop!
What You’ll Need
- For the dough:
- 3 cups mozzarella cheese, shredded (low moisture)
- 2 ounces cream cheese, softened
- 2 large eggs, room temperature
- 2 cups almond flour, blanched
- 1 tablespoon baking powder
- For the topping:
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, freshly grated
- 1/4 cup parsley, chopped (to serve)

Instructions
- Prepare the Dough:
- Preheat your oven to 400°F (200°C) and line a large baking tray with parchment paper.
- In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 20-second increments until melted. Whisk until smooth.
- In a food processor with a dough blade, combine the melted cheese, eggs, almond flour, and baking powder. Blend until a smooth dough forms.
- Shape and Top:
- Transfer the dough onto a parchment paper-lined surface. Place another sheet of parchment paper on top and roll out the dough into a large oval shape.
- Transfer the dough to the prepared baking tray. Sprinkle the top with mozzarella and parmesan cheese, leaving a 1/2-inch border around the edges.
- Bake:
- Bake for 10-12 minutes, until the cheese is melted and the edges are golden.
- Remove from the oven and slice using a pizza cutter. Sprinkle with chopped parsley and serve immediately.

- To Store: Keep leftovers in an airtight container in the fridge for up to 5 days. Ensure there are no air pockets to keep the bread soft.
- To Freeze: Store cooled slices in a ziplock bag and freeze for up to 6 months.
