How I Made This Keto
Traditional lava cake recipes are usually packed with flour, sugar, and cocoa powder—all big no-nos on a Keto diet. But don’t worry; I’ve created a delicious version that stays true to your dietary goals.
First up, instead of cocoa powder, I opted for unsweetened cacao powder. Cacao is a superfood, processed at low temperatures to preserve its nutrients and minerals, unlike cocoa powder, which loses much of its goodness during processing. Just a heads-up, cacao can be a bit bitter, so I balanced it with my favorite Keto sweetener: granulated erythritol. It’s great for baking because it doesn’t leave that weird aftertaste that some other low-carb sweeteners do.
If you’re into Keto baking, you likely have almond flour stashed away. It’s a low-carb, gluten-free alternative to regular flour, made from blanched almonds ground into a fine powder. Just a little bit goes a long way in this recipe, and the nutty flavor won’t be noticeable. For a dairy-free twist, I used coconut oil instead of butter. You can go for unrefined (virgin) coconut oil, which has a hint of coconut flavor, or refined coconut oil, which is more neutral. Choose whichever you prefer!

- 2 tablespoons (24 g) granulated erythritol
- 1 tablespoon (8 g) almond flour
- 1 tablespoon (15 ml) melted coconut oil, cooled (plus extra for greasing ramekins)
- 1 large egg
- Fresh berries and powdered erythritol (for serving, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease two small ramekins with coconut oil and set aside.
- In a small bowl, mix together all the ingredients until smooth, then spoon the batter evenly into the prepared ramekins.
- Bake for 8 to 10 minutes, until the edges are set but the center is slightly jiggly—don’t overbake!
